Shun VG0008 Blue Steel 10-Inch Kiritsuke Knife



Good knife, it is two side blade.
I am Experience Sushi Chef, I were collect a lot knife;Traditional Kiritsuke knife sashimi should be one side blade. Shun Kiritsuke knife showed photo looks just like one side blade, price only half even more less than sashimi kiritsuke knife. When I got this knife, I know that it is Shun kiritsuke knife AD photo let me made mistake . From testing, I recommend Shun Kiritsuke knife use for cut vegetable or sushi roll, it is very good sharp knife, can keep sharp longer than other same price knife. If you want use for cutting sashimi, one side blade sushi knife will be more better.

Awesome Knife
I'm a culinary professional with a major luxury hotel brand and I absolutely love this knife. It plows through almost anything it comes up against. Not to mention that it is stunningly beautiful. Well worth the money. The only minor downside is that it requires more care than some might want to take.

The best
It is hard to find a better knife. This is always being used at our house. It is costly and requirers extra care, but it is more than worth the cost.

Shun DMS235 2-Piece Classic Meat Set of Knives



A 'Wow" addition to the home cooking tool box
First, I've come to love Shun knives as the best value for money in higher end cutlery. These two knives are an interesting pairing. The cleaver is a beast. The 10" hollow ground is a highly flexible razor. As a note, neither look like the Damascus steel of other Shun's .

Classic cleaver:
1. I've not imagined much need for the big knife. I was wrong. I first used it to whack through a whole chicken, oriental style. It did the job perfectly.
2. In the process of cutting the chicken, I had bok choy to thin chop. I used this big boy and discovered that it is also the best veggie chop knife I have. The control and speed of the knife in rocking mode is superior to the 2 high end metzaluna's I had become used to.
3. The knife is heavy and solid. Sharpening to surgical edge is easy maintenance.

10" hollow ground salmon/ham knife:
1. The sharpest and smoothest thin cutter I've ever seen.
2. Highly flexible blade enables straight cuts. The knife...

super knifes
Great knives. Cleaver is great for breaking down chickens, etc. Slicer is exceptional on filleting salmon. Highly recommend, knives have superb balance. Would buy again.

Helps me with my Iron Chefin'
I can not believe how much I got these for in the Gold Box. I'd just told my husband I wanted a cleaver and the next day this appears. They're sharp, of course, and the cleaver has some weight to it. My only real issue is one of storage. I honestly have not used the salmon knife as I bought this set just for the cleaver - and it cost less than just the cleaver alone.

Shun DMS382 3-Piece Classic Internet Special Set of Knives



Shuns, Wonderful Shuns
I already had a set of other Shun knives, but could not resist adding this particular group to my collection. They are all an excellent size. I find myself using my small and medium sized Shuns most of the time, reserving the larger ones for especially large tasks. The Sankotu is of course terrific. The utility knife (that can spread as well as cut) is the ultimate sandwich knife; I've had my eye on that one for over a year. The rather odd shaped paring knife has been surprisingly useful. I wouldn't have chosen it by itself, but now find I'm using it almost every day. Shun knives are a bit demanding: you can't cut in to anything with bone in it, unless you're very, very careful not to hit the actual bone (which can chip the Shun's delicate blade). You must hand wash and dry the knives. But Shuns are worth it!

Amazing Knives!
Bought these with a gift certificate I had - SOOO worth the purchase! These are fabulous and work really well! Able to cut super thin on veggies and fruits. Nice grip. Almost TOO sharp, they work so well! Highly recommend.

If you find a good deal on these knives.. Buy them:) the sharpest knives i have ever used.. Also buy the honing steel from shun to help preserve your knives

Shun DMS286 Classic Knife Set, 2-Piece



Great Knives.
Excellent knives at a good price for the quality. They cut better than any kitchen knife that I've ever had. These are professional grade tools.

Terrific knife ste
Love the balance, the extreme sharpness of this knife set, have purchased other knives but never ones as sharp as these.

Best kitchen knives so far!
Purchased these Shun Utility and Chef knives during the lighting deal.

* Appearance - they are visually very good looking knives.
* Weight-these knives are light weight. But you will get use to it quickly.
* Sharpness - very sharp and effortless for cutting and slicing.
* Price - These knives worth the price. But they are still a little pricy. If you don't need both, just get the one you need.

IMO - I love both knives. The 6 inch utility for all the small stuff like cutting veggie. The 8 inch chef knife for everything else. I have some German knives at home. These Shun knives are just better knives than the German ones.

Great set to grow on
Great set for Shun classic knives. It includes three of the most versatile knives each of which is slender, light-weight and sharp, with typically high Shun quality. The 11-slot Bamboo block enables you to gradually fill it in with the knives YOU want - unlike typical sets which come with a bunch of knives you might not use. The natural anti-microbial properties of bamboo make this a great place to store knives. The only complaint I had was a lot of sawdust in the block, requiring the quick use of a blower or shop vac to get it all cleaned out before use.

GREAT PURCHASE
I love Shun knives for their quality and incredible cutting ability. This was an incredible purchase. I also have six other Shun knives.

Shun TDMS0200 Premier 2-Piece Carving Knife Boxed Set, Silver



beautifully made
This set is not only beautiful, but comes both well packaged and sharp. This is the second set I received from Amazon though. In the first set the point of the knife had been broke off and was not anywhere to be found.

a work of art
This is a beautiful set and makes a very fine gift. Shun/Kershaw is a well respected brand and the knife is very sharp and of fine quality.

That said, you could likely find a set with similar cutting ability for less than half the price (but it would not be the work of art this set is; no points off the review because simple functionality is not what this set is about).

Watch for it to go on sale.

Amazing carving set...
Had company coming over for Easter and needed a new carving set for the spiral cut ham...Had heard good things about Shun knives, but thought they were a little over priced-til I started carving with it! Amazingly sharp and gorgeous to look at right out of the box...easy to keep sharp with just a few strokes on the steel...A+!

Shun Edo BB1514 6-Inch Boning Knife



Absolutely aggressive!
First off, I am a professional meat cutter. I wanted the best the market has to offer, and I'll tell you right now, THIS IS IT! I started cutting with a Victorinox straight boning, which was my standard. A bit more stiff than this narrow (flexible) blade. This Edo is a very different style of knife than I'd expect. At work I use a fillet/boning knife which is flexible, but is not comparable to this knife. Only the first two inches of the knife is truly flexible (impressively flexible), the rest stiff. The perfect proportion of flexibility and usability.

Let me also say I've tried other products, such as Dexter-Russell, and Global. Neither come close.

Out of box this knife is unbelievable, great edge, and aggressive appearance. One of the first things I did was de-bone some short ribs, which resulted with the cleanest bones I've ever had to throw away. The other remarkable feature I noticed is how clean cuts really were. The knife left so must more moisture still...

Not VG-10 as Described!
Ok, so I bought the Shun Edo 6" boning knife with a description that the steel would be VG-10. It is not, it's AUS8. It appears these Edo's were never made with VG-10 steel.

Not a huge complaint at $68.00 but this should be corrected in the description.

great knife
This boning knife exceeds my expectations. Stays sharp, I was actually afraid of it for a few weeks until I got used to it. Only negative: I cannot find a blade safe to fit it properly.

Shun Edo BB1500 4-Inch Paring Knife



Great for small chopping projects, but not for peeling
This is called a paring knife, but its wide blade makes it impractical for peeling produce and other projects that I normally use a paring knife for. A birds beak knife like Shun DM0715 Classic 2-1/2-Inch Bird's Beak Knife is best for that. This is very sharp and excels for chopping small amounts of garlic, parsley, a tomato or two, etc. I only use a few knives (but own a ridiculous number), and believe the "right knife for the right purpose". This is not as versatile as a bigger chef's knife, but its small size and easy control makes it a valued addition.

STOP buying cheap paring knives.
Incredibly sharp knife out of the box - Finally ended the needless purchase and disposal of all those dime store paring knives.

Great knife
Great for slicing. I am not as comfortable using for peeling as with smaller knives, but still often my first choice for many tasks.

Shun Edo BB1505 7-1/2-Inch Santoku Knife



Surpassed Expectations
Extremely well balanced and sharp. Cuts through vegetables effortlessly. We are very happy with the purchase and unbeatable price.
Had a Henkel Gemini Santoku, which performed well, but not at the level of the Shun Edo.

One Very Good Looking Knife
I replaced a cheaper knife set Santoku type knife with this one. It is a fine looking knife, but it turned out to be a lot wider knife than the one I was replacing. I ended up moving my meat cleaver into a drawer so I had a spot for it in my knife block. I have had to sharpen it twice in three months, but it keeps an edge many times longer than the knife it replaced. I use this knife a lot, and it is handy to use on most ever thing I cut.

Big bucks but well worth it!
Saw knife advertised on internet,intrigued by glowing description so I
took a chance. My wife who cooks as a hobby and worked for
numerous years as a cook loves it.She never used a knife that
worked as well! So I'm happy too.....

Shun Edo BB1503 8-1/2-Inch Chef's Knife



Extremely sharp, well balanced, and beautiful.
Arguably one of the most beautiful knives I've ever laid eyes on, so I bought it.

It's actually much larger in my hand than I expected, it's also very very heavy for a chef knife, much heavier than any of my Globals, Wusthofs, or Macs. I really like the weight, it feels like a really well designed knife.

It's extremely sharp (like most Shuns), so the best advice anybody could give you with this knife is to be careful.
The handle is comfortable and feels like a really high-quality wood, and the knife is quite well balanced.

Just be aware that the knife is much larger in person than it appears in the pictures. It's 8 1/2" long, and quite wide (tall) for a chef knife.

The only downside to this blade is that stuff really does stick to it, almost like a suction cup; albeit that was expected. Other than that I'd say it's probably the best knife I've ever owned.

I highly recommend this knife to anybody with good knife skills, if...

Great knife!
If you appreciate great cutlery, you'll love this knife. Shun's are now my favorites in the kitchen. The get very sharp and hold their edge. This knife came with a little bamboo stand, which is handier than I expected.
