Shun Edo BB1503 8-1/2-Inch Chef's Knife



Extremely sharp, well balanced, and beautiful.
Arguably one of the most beautiful knives I've ever laid eyes on, so I bought it.

It's actually much larger in my hand than I expected, it's also very very heavy for a chef knife, much heavier than any of my Globals, Wusthofs, or Macs. I really like the weight, it feels like a really well designed knife.

It's extremely sharp (like most Shuns), so the best advice anybody could give you with this knife is to be careful.
The handle is comfortable and feels like a really high-quality wood, and the knife is quite well balanced.

Just be aware that the knife is much larger in person than it appears in the pictures. It's 8 1/2" long, and quite wide (tall) for a chef knife.

The only downside to this blade is that stuff really does stick to it, almost like a suction cup; albeit that was expected. Other than that I'd say it's probably the best knife I've ever owned.

Great knife!
If you appreciate great cutlery, you'll love this knife. Shun's are now my favorites in the kitchen. The get very sharp and hold their edge. This knife came with a little bamboo stand, which is handier than I expected.
