THIS KNIFE IS AWESOME!
BEING A PROFESSIONAL CHEF FOR THE LAST 10 YEARS I HAVE USED MANY KNIVES. THIS KNIFE IS BALANCED PERFECTLY, WEIGHTED PERFECTLY AND IS SHARP. I LOVE IT
Usuba a good addition to the Edo line
As an owner of the Shun Edo 9-Piece Knife Block Set, I was on the fence as to whether or not to get the usuba or the santoku knife to do my veggie prep work. I finally chose the Usuba when it went on sale, and was not disappointed.
The knife itself is well-constructed. The handle is easy to grip, the bolster is designed for a solid thumb grip as needed, and the blades are razor sharp with an arched edge for retention. The handles and steel finish are gorgeous, and hold up well under use.
As a prep knife, it's solid but well balanced,. Chopping, dicing and mincing are all effortless with this knife. As with all edo knives, the bolster leaves plenty of room for your grip to keep it out of the way of cutting. The flat edge makes quick prep work a breeze.
Like other knives in the Edo line, this one is very easy to clean after use. The VG-10 steel keeps its finish and does not...
Amazing knife
I am not a professional chef, but love to cook and eat. This is one of my first professional handmade Usuba and I am just loving it. In fact, I travel with it where ever I go and don't miss a chance to help out cutting vegetables. Just love it. I now need to know how to keep it sharpened. Bought a Shun 1000 & 6000 grit whetstone and looking for tips to sharpen the knife. These Japanese do everything so excellent.
